Steak
The steak is a premium meat product, crafted to exacting standards of quality. The kitchen is responsible for the flavour and method of preparation of all meats, including fillet, rump steak, American prime, porterhouse and wagyu, as well as turkey, chicken and kangaroo. However, presentation, accessories and arrangement are also key elements of the gastronomic service. Porcelain plays a crucial role in this process.It is about emphasising the effect of the food and, at the same time, fulfilling important functions for the guest.
A steak, as a main component in its own right, should be served differently to a steak combination, such as surf and turf. The focus is less on appearance and more on the framework and stability of the individual components of the dish. The addition of sauces in the main course, as with Roquefort steak or fillet Gorgonzola, requires medium-high edges that do not impede cutting but allow room for vegetables and side dishes. It is recommended that the typical T-bone steak be served on a plate with matching bowls for sauces, dips, and salads. A Chateaubriand should be presented on an oval platter in a generous arrangement, accompanied by a place setting with a sauce boat on top.
In place of the standard wet wipes with a Metro print, a finger bowl with lukewarm water is a high-quality, gastronomic product. Similarly, ingredients such as steakhouse fries, jacket potato and mashed potatoes should also be provided with an appropriate setting.
