Mulled Wine
In the event that mulled wine cups are used commercially, it is imperative that they be labelled in accordance with the German calibration law or the European calibration regulations. In accordance with the law, the term 'commercial' applies to any serving provided in exchange for money or services, including donations.
In the context of gastronomy, calibration refers to the accurate dispensing of a guaranteed quantity or weight to the consumer, using a standardised marking on the packaging or dispensing container. This allows the consumer to visually verify the dispensing quantity upon receipt of the product.
Due to the inherent production-related tolerances, porcelain and ceramics are costly and time-consuming to calibrate. It is rare for customers to pay the price that reflects the effort involved.
To comply with the calibration regulations, some suppliers of calibrated mulled wine cups apply the calibration mark 7 to 10% above the desired fill level. This equates to a volume of between 0.22 and 0.25 litres in the calibrated cup, rather than the stated 0.20 litres. In the worst case scenario, this equates to a loss of revenue of approximately 20% for every fifth mulled wine sold. It is unfortunate that only a few people are aware of this.
