The quiche Lorraine (also known as the Lorraine bacon tart) is a renowned dish originating from the farmhouse parlours of Lorraine. It has gained global recognition and is a popular choice for many. The quiche (French cake) was originally made from stale bread dough and refined with eggs and sour cream. The Dukes of Nancy discovered the benefits of down-to-earth cooking and included this dish on their menus. It is also said that the artist Jacques Callot made the traditional dish famous because his grandson refused to eat any other dish except quiche at the inn in Nancy because he was so enchanted by the flavour of the spicy tart. It should be noted that there is one such version to be found there, although it originates from the inn rather than the history of the quiche.

It should be noted that the quiche varies according to regional aspects in France. In Normandy, it is flavoured with seafood, in the Vosges with potatoes and fruit as Quiche Vosgienne or in Alsace as Quiche Alsacienne with spinach and leek.In many cases, this is no longer a quiche, but a tart if you examine it from a strict culinary perspective.
