Brown or brownish baking dishes and oven porcelain, like those from the "Marrone" series, are especially popular in Mediterranean cuisine. The brown color of the outer edge accentuates the visual appeal of crusts and roasting aromas, imparting a unique character to freshly baked dishes.

Opinions may vary on whether the red of a lasagna, the yellow of a potato casserole, or the green of vegetable gratins is best highlighted by the brown edge of Marrone casseroles or the bright white of the Toscana series.

At Holst Porzellan, we offer both options, and both oven series feature the classic flame relief design. This decoration on the baking dishes signifies oven safety and also serves as a quality seal in the kitchen for fresh, baked, gratinated, or roasted dishes.

The brown color on the edges of the Marrone series is applied using the fond spraying technique. This type of glazing is very elaborate and expensive, requiring an additional decorative firing compared to the white baking dishes. Fond-sprayed colors are never 100% identical or uniformly opaque, highlighting the artisanal character of the production. Each piece is unique. In terms of material, the brown Marrone baking dishes differ from the white Toscana forms. Due to the additional firing, the recipe, and the composition of the brown glaze, we cautiously assign the Marrone baking dishes an approximately 80 °C lower temperature resistance compared to those of the Toscana series. We guarantee Marrone can be used at temperatures up to 220 °C, which is sufficient for both cooking temperatures in the oven and serving capabilities at the table according to HACCP standards. The flat, smooth bottoms of the Marrone baking dishes ensure even heat distribution and good heat retention on chafing dishes, buffets, and serving stations.

Regarding commercial usability, these baking dishes are on par with others; they are dishwasher safe, meet high hygienic standards, are suitable for halal and hypoallergenic diets, and feature the typical wavy edge of professional baking dishes.
