Line Black Iron
Serving in cast-iron pans and serving dishes is particularly popular in rustic cuisine. Home pans, hunter's pots, and many braised dishes can be stylishly and attractively served in black iron cookware.
However, whether forged iron pans and coated metal cookware still meet the high hygiene standards of LFGB and HACCP is questionable. Real iron pans need to be seasoned with great effort, and according to the care instructions from manufacturers, they should be cleaned only with water and a damp cloth when possible. Iron pans should not be cleaned in a dishwasher. If iron cookware is stored for extended periods or stacked while still damp, mold can quickly form. Coatings on metal cookware tend to scratch easily and can develop surface cracks or lose their suitability for food contact when misused, such as cutting, scraping, or shock rinsing.
None of these limitations exist with porcelain. Even if the black coating were damaged under high pressure or physical force, beneath it is pure feldspar porcelain, which ensures maximum hygienic stability, even without any glaze.
